Suddenly the skin of the hand and under the nails such a strange shade of red. It's my body in any other part. I recently stopped eating meat, and I fear that this may have a sign of a lack of vitamins and nutrients?

Have you hung out of the hands and move them to, because that could make the filling with blood. Or have remained in the cold for a while, because the heat can cause sudden blood in their hands. If you do not eat meat, you'll get enough protein and iron from other sources, but do not think it would be the hands red.
If you recently washed your hands with warm water, soap or other than normal, this may the problem. My hands do this all the time. Hope this helps:)
